Gluten Free Diet? Try Alice’s Pink Grapefruit + Avocado Salad

May is Celiac Awareness Month. With an estimated 3 Million people living with Celiac Disease we reached out to Alice Bast, Mom and Founder of Beyond Celiac, to talk about the disease. In our interview, Alice explained how celiac disease works, surprising places gluten can be found and tips on managing our gluten-laden society. Alice also shared one of her favorite gluten free recipes: Pink Grapefruit + Avocado Salad. I made it with local lettuce, crisp basil, real lemon juice and toasted pine nuts and walnuts for texture. It was delicious!
Alice’s Gluten-Free Pink Grapefruit and Avocado Aalad Recipe
Ingredients:
1 sliced fresh avocado
2 sectioned and peeled pink grapefruits
1 head of Boston Bib lettuce
Olive oil
Lemon juice
Salt
Pepper
Fresh basil
Directions:
Wash and dry lettuce and place in bowl. Add in avocado and pink grapefruits.
Chop fresh basil and add to salad, per your taste preferences. It’s a great time of year to include fresh basil in salads!
Drizzle salad with as little or as much olive oil and lemon juice as you like. Salt and pepper to taste.
Alternatives:
Create a pink grapefruit zest dressing. Zest the grapefruit and whisk together with lemon juice or olive oil.
For extra nutritional value, top with pomegranate seeds.
- To give the salad a crunch, toss in some toasted nuts.
