Raspberry Almond Gluten Free Pancakes

Breakfast in bed for Mom on Mother’s Day is a tradition in our house, but it’s usually preempted by the tradition of letting Mom sleep in a little late. These Raspberry Almond gluten free pancakes are a great choice for an early brunch. They are vegan and gluten free, and flavored with bananas and raspberries. So you can feel good about helping Mom feel good on her special day.

Raspberry Almond Gluten Free Pancakes

  • 1 1/2 cup old-fashioned rolled oats
  • 1/2 cup brown rice flour
  • 1/2 cup ground almond flour
  • 1 TBL ground brown flax seed
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 1/2 tsp gluten free, aluminum free baking powder
  • 2 cups frozen raspberries, divided
  • 1 very ripe banana
  • 1 1/2 cups almond milk
  • 1/8 cup maple syrup, plus an additional 2 TBL, divided
  • 1 TBL apple cider vinegar
  • 1/8 cup unrefined, virgin coconut oil, melted

Pulse the rolled oats in a blender until it resembles the consistency of a course flour

Mix the rolled oats and the remaining dry ingredients (through the baking powder) in a medium-sized mixing bowl

Add 1 cup frozen raspberries, the banana, and almond milk to a blender, and blend until very smooth. Pour into a large mixing bowl.

Add your 1/8 cup maple syrup, the apple cider vinegar, and the melted coconut oil to your raspberry mixture, and stir until well blended

Slowly add the dry mixture to the wet, stirring gently until all of the dry mixture has been added and well incorporated

Brush a pan or griddle with melted coconut oil heated over medium heat

Add pancake batter to the pan (I think 1/4 cup of batter makes the perfect size!) and cook for 2-3 minutes until beginning to brown one side. I find it best if you cover the pancakes during this stage to help the inside cook

Flip your pancakes and let cook until inside is fully cooked, about another 3-4 minutes

For the Raspberry Syrup

Place 1 cup raspberries in a small bowl, and microwave on high until the mixture just begins to lose some liquid

Let cool

Add to blender with 2 TBL maple syrup, and blend until smooth

Drizzle your pancakes with the raspberry syrup, and garnish with fresh raspberries.
