I’ve been on the lookout for desserts made with no refined sugar, but have been a little skeptical about some of the recipes I have found. Chocolate pudding made with avocado? I should have had a little more faith. This vegan chocolate raspberry pudding is rich, chocolatey and delicious. It gets plenty of sweetness from the dates,and I’ve added my own twist with fresh raspberries. If you aren’t a fan of raspberries, this pudding is delicious without them.
Vegan Chocolate Raspberry Pudding
For the pudding
- 3/4 cup fresh organic raspberries
- 1 medium-sized ripe avocado
- 1 cup (packed) pitted medjool dates, chopped
- 1/2 cup coconut milk
- 1 TBL coconut cream
- 3 TBL organic unsweetened coconut powder
- 1/2 tsp sea salt
Put the raspberries in a small bowl, and mash with a fork.
Heat the raspberries over low heat, stirring constantly, until most of the liquid has evaporated. I used the microwave for this step! Just microwave on low power for 2 minutes at a time.
Let the raspberries cool
Put the remaining ingredients into a food processor or high speed blended. You will probably need to start by pulsing the mixture, as the dates are sticky and can be a little tough to blend. But stick with it and you’ll be able to blend until it achieves a nice, thick pudding-like consistency
Place the pudding mixture into a bowl, and gently fold in your raspberries. Place in the refrigerator and let chill.
For the coconut cream
1 cup coconut cream (the thicker the better)
1 TBL maple syrup
1 tsp vanilla
1/2 cup unsweetened coconut flakes
If your coconut cream needs to thicken up a bit, put it in the fridge and let it harden. I have found that some brands are thicker than others. For this recipe, you want ONLY the cream on top, and none of the coconut water found underneath
In a mixing bowl, add the coconut cream, maple syrup, and vanilla. Whisk until incorporated
Add the coconut flakes and continue to whisk until the mixture is somewhat fluffy
To compose your vegan chocolate raspberry pudding
Layer your pudding and cream into serving utensils. Parfait glasses are perfect.
Top with a raspberry
