1. Vegan Brownies

Gooey, chocolatey, and beyond mouthwatering, this recipe is reminiscent of the classic brownies your grandmother used to make.

Here's what you'll need:

  • ½ cup mashed avocado
  • 1 cup almond milk
  • 1 cup flour
  • ½ cup unsweetened cocoa powder
  • ½ cup sugar
  • 1 tsp baking powder

Preheat oven at 350 degrees and grease an 8" x 8" baking dish with vegan cooking spray. Mix the avocado and almond milk in a large bowl until smooth. Add all the remaining ingredients and mix until fully incorporated. Pour into the baking dish and bake for approximately 20 minutes. Let cool for 15-20 minutes before serving.

2. Mean Green Banana Smoothie

The next time you're craving a milkshake, substitute this creamy smoothie instead. It will satisfy your sweet tooth while providing plenty of potassium.

  • 1 avocado
  • 1 chopped frozen banana
  • 1 cup fresh spinach
  • 1 cup almond milk
  • 1 cup orange juice

Remove the skin and pit from the avocado and place it in a blender with all of the other ingredients. Mix until everything is fully incorporated. If you don't like green drinks, add ½ cup of blueberries to create a pleasing purple hue.

3. Chocolate Avocado Fudge

Fudge is a summertime staple, and a great dessert to bring to a family barbecue. This yummy vegan recipe by Kibby Miller trades the butter of traditional fudge recipes for avocados and coconut milk. Go ahead, grab another piece, and spread the word about the awesomeness of avocados by sharing a little sweetness with the ones you love.

4. Pistachio Pudding

Green pistachios are the perfect parter to avocado for a creamy pudding
Not only is this delicious dessert vegan and gluten-free, but it requires absolutely zero cooking. The key to perfecting this treat is in soaking the pistachios, which softens them to an easily blendable consistency. If you are someone who likes a little salty with your sweet, this avocado dessert recipe is for you.

Here's what you'll need:

  • ½ cup shelled, salted pistachios, soaked for 2-3 hours in cold water
  • 2 avocados
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • ¼ cup maple syrup
  • four mint leaves

Drain and rinse the pistachios and place them in a blender. Blend until smooth. Remove the skin and pit from the avocados. Add the avocados and all remaining ingredients into the blender and mix until everything is fully incorporated. Place the pudding into four dishes and garnish with the mint leaves to serve.
