Here's what you'll need:

  • ½ cup mashed avocado
  • 1 cup almond milk
  • 1 cup flour
  • ½ cup unsweetened cocoa powder
  • ½ cup sugar
  • 1 tsp baking powder

Preheat oven at 350 degrees and grease an 8" x 8" baking dish with vegan cooking spray. Mix the avocado and almond milk in a large bowl until smooth. Add all the remaining ingredients and mix until fully incorporated. Pour into the baking dish and bake for approximately 20 minutes. Let cool for 15-20 minutes before serving.

  • ½ cup shelled, salted pistachios, soaked for 2-3 hours in cold water
  • 2 avocados
  • 1 tsp vanilla extract

  • ¼ cup maple syrup
  • four mint leaves

Drain and rinse the pistachios and place them in a blender. Blend until smooth. Remove the skin and pit from the avocados. Add the avocados and all remaining ingredients into the blender and mix until everything is fully incorporated. Place the pudding into four dishes and garnish with the mint leaves to serve.
